Mustard and Ketchup

What's wrong with people these days, convenience stores, restaurants, they leave these things out all day, says "refrigerate after opening" on all them. How do they know when they have gone bad? I use the little packs...:pat:

now... whether or not they actually do it is up to the manager or chef on duty that day... heh.
